Blackberry chia jam
I usually steer away from conventional jams as some can contain up to 50% sugar so I usually buy pure fruit spreads. This chia jam is a really quick alternative to the full-on faff of jam-making because it’s so easy. I tried it out with my latest haul of blackberries but it works with nearly any fruit. This is such a good way to eat chia seeds - they are a good source of omega 3s as well as fibre. Win-win!
2 cups of blackberries
2 tbsp sweet stuff (date syrup, maple syrup, honey)
2 tbsp lemon juice
2 tablespoons chia seeds
Place the berries in a pan and simmer until they become syrupy. This should take between 10 -15 minutes. Remove them from the heat.
Add in the chia seeds, lemon juice and whatever sweetener you are using and stir until combined. Leave to thicken.
Enjoy as is, or you can puree for a smoother texture if you prefer.
