Apple & blackberry baked oats

Ingredients

2 cups rolled oats (I used gluten-free)
1/2 cup of ground almonds
1tsp baking powder
1 cup almond milk
1 dessert spoon almond butter
1tsp cinnamon
1tbsp melted coconut oil
2 eggs
1 dessert spoon maple syrup
2 small apples or 1 cooking apple
flaked almonds, cinnamon and pumpkin seeds to top

Method

Heat your oven to 180C.
Blend the oats until they turn to a powder. Add the ground almonds, baking powder, eggs, almond butter, cinnamon, oil, milk and blitz until smooth.
Sprinkle the apples and blackberries on a lined baking tray. Top with the batter and sprinkle with the seeds, flaked almonds and a sprinkle of cinnamon.
Bake for between 20 -25 minutes or until cooked through (use a skewer to check)Serve with a dollop of live yoghurt and more berries.
