Seedy Bircher

This great make-ahead breakfast is the love-child of Bircher muesli and chia pudding. Full of gut-friendly fibre and phytoestrogen-rich seeds, if you’re eating this alone you’ll have plenty left over the next few mornings.

Ingredients

1 tbsp ground flaxseeds

2 tbsp chia seeds

1 handful raw almonds, roughly chopped

1 handful pumpkin seeds

1 mug almond milk

2 tsp cinnamon

Method

  • Combine everything together and place the mixture in a jar or plastic-free container and place in the fridge overnight.

  • The next morning, add a little more milk to slacken the mixture. The seeds will have soaked up the liquid and it might be a bit thick.

  • Serve with Greek yoghurt and fresh fruit.
