Blackberry chia jam

I usually steer away from conventional jams as some can contain up to 50% sugar so I usually buy pure fruit spreads. This chia jam is a really quick alternative to the full-on faff of jam-making because it’s so easy. I tried it out with my latest haul of blackberries but it works with nearly any fruit. This is such a good way to eat chia seeds - they are a good source of omega 3s as well as fibre. Win-win!

2 cups of blackberries

2 tbsp sweet stuff (date syrup, maple syrup, honey)

2 tbsp lemon juice

2 tablespoons chia seeds

  • Place the berries in a pan and simmer until they become syrupy. This should take between 10 -15 minutes. Remove them from the heat.

  • Add in the chia seeds, lemon juice and whatever sweetener you are using and stir until combined. Leave to thicken.

  • Enjoy as is, or you can puree for a smoother texture if you prefer.
